Recipe of the Week....Cheddar and bacon muffins

I'm trying out a new recipe each week of the summer holidays.......and went for a lunchtime recipe this time.......partly because I had some leftover bacon rashers. 
These were delicious.......but probably more for a treat,rather than everyday......they are quite high in fat.....and not overly cheap per muffin......though great for using up any leftover bacon or cheese that you have.



Cheddar and Bacon Muffins
4 rashers lean bacon
50 gms cheddar [cut 2/3 into small pieces......grate remainder]
175 gms plain flour
1 tsp baking powder
2 beaten eggs
85 gms melted butter
200 mls milk
1 tsp chopped chives or parsley [optional]

Oven to 180 c/gas 6

Sift flour and baking powder into bowl.
Mix eggs,milk and butter together
Pour wet mixture into the dry and just combine [the mix will be runny and lumpy,but don't stir it]
Add bacon and cheese bits and chives.....don't over mix.
Spoon into 6 greased holes of muffin tray.....they can be quite full.
Sprinkle grated cheese on top.
Bake for 25 mins.
I did weigh the ingredients this time.....I tend to think the proportions actually matter with baking! When I make these again I may try oil instead of melted butter.

Yum! If I made these maybe I could overcome the nigtmare of the cheese scones I made as a teenager. Family can be harsh lol
