Bacon Tortilla
- 4 tbsp olive oil
- 1 onion , thinly sliced
- 350g new potatoes , sliced
- 4 rashers rindless smoked back bacon , chopped
- 6 large eggs
- 85 g mature cheddar , grated

Heat the olive oil
in a frying pan, add the onion and potatoes and fry for 8 minutes, turning the veg frequently until tender but not browned. Add the bacon
and fry for a further 2-3 minutes. Meanwhile, beat the eggs in a bowl
with salt and pepper. Stir in the cheese.

Remove the potato
mixture with a slotted spoon and stir into the eggs. Reserve most of the excess
oil, leaving a little in the pan. Pour in the egg mixture and leave to cook
undisturbed over a gentle heat for 8 minutes until firmly set underneath but
not set on top.

Invert the tortilla on to a plate and
return the pan to the heat with a bit more of the reserved oil. Slide the
tortilla back into the pan, uncooked side down, and cook for 5 minutes until
set all through.
4.
Serve with salad.
I always like tortilla when we have it in Spanish restaurants......so don't know why I haven't cooked it before......maybe because DD1 won't eat onions.......and seeing her disapproving face as she picks out every piece....is not conducive to an enjoyable meal.......so in this one I just substituted spring onions [which she does eat]......and she declared it delicious.
Again I didn't actually weight the ingredients.....and used less potatoes and 4 eggs for the two of us.
I managed to take a rubbish photo.....so this is what it looked like on the Good Food website which is where I found the recipe........and there's hundreds of other recipes there as well.

Looks good. Our new recipe of the week was Bruschetta Chicken. It was delicious and beautiful to look at, but I didn't remember to take a photo. (Seems like that always happens when we have company!)
Ooh that does look good. I used to cook tortilla quite often when I was a vegetarian, not with bacon in obviously!

Looks lovely! Penny doesn't eat onion either, but we have found if we chop it up really finely in a food processor then she will!

They look delicious! I'm with your daughter on onions,. I put them in the food processor and spin them until they are very small. It's not the taste I object to but the texture.

Yum! I'm doing a bit more cooking these days and trying some new recipes myself. The kids' favorite so far have been teriyaki chicken.

I've never cooked this before either - but it really does look like something we would enjoy. Anything with potato in is a winner round here!
