Let's Eat Blog Hop

Welcome to my part of the 'Let's Eat Blog Hop' organised by the wonderful Amy......where a whole host of bloggers from around the globe are sharing foodie stories and recipes....you should have arrived from Cheri's lovely blog......if not, you can always go to Amy for the start of the hop.
When I was a child.......back in the dark ages......my mum cooked all our food from scratch......no freezer back then......just an enormous fridge......which I do recall......contained more than it's fair share of large bottles of my dad's Ind Coope beer!!
No packed lunches at school either.......school dinners......or home for dinner......so after school it was time for 'tea'.....my favourite meal of the day......all homemade...... sandwiches, scones, cakes,biscuits and more.Teatime [sadly] is a something we only have on rare occasions now......but it is the inspiration for my recipe.
I've chosen to share this 'apple tray bake'.......partly because apples are in season in the UK......and we are lucky enough to have a Bramley apple tree in our garden that is laden with them........and partly because it's easy to make.......versatile [good as a cake or as a dessert].......and keeps really well in a tin.

Ingredients  [non 'metric' bloggers can find a conversion chart here]
approximately 400 gms cooking apples [windfalls will do]
juice of half a  lemon
225 gms soft butter
280 gms caster sugar
4 eggs
2 tsp vanilla essence
350 gms self raising flour
2 tsp baking powder
greased and lined baking tin [approx 27 x 20 cms]
Oven- fan 160c/ conventional 180c/Fahrenheit 350/ gas 4

Method
Peel and thinly slice apples and squeeze lemon juice over them.
Mix all the other ingredients together.
Spread half the mixture into baking tin.
Place the sliced apples on the top of the mixture.
Cover with the other half of the mixture.
Bake for 45- 50 minutes.
Leave to cool for 10 minutes before turning out of the tin.
THEN  ENJOY.

This looks good and just the kind of thing my husband will love!
Think my childhood kitchen was much the same as yours, I remember the excitement of getting a freezer when I was a teenager! We stored a lot of our food in the larder on cold marble shelves when the fridge was full. Not sure they build houses with larders any more!

Jacky, my Grandma used to make an apple cake which is quite similar to this one and it was always utterly delicious. Oh, and I would eat it not so long ago ... no dark ages here!

This is completely new to me and sounds wonderful. I only know the upside down type of apple cake, this seems like I could eat it with my fingers! :)

We love apples in this household so this is definitely one I'll be giving a try. Have you tried adding cinnamon to it? I fancy that idea :)
