There must be hundreds of truffle recipes........and I must have tried quite a few of them...... this is definately the easiest........but be warned........they're very rich........so in this instance......small balls are definately best!!
Ingredients
225 grms [8 oz] chocolate [or see below]
60 mls [4 tbls] condensed milk
few drops flavouring [optional]
cocoa powder/icing sugar/choc strands to roll them in [optional]
- Break choc into small pieces and melt.
- Stir in condensed milk and flavouring.
- Allow mix to cool and thicken slightly [this happens quite quickly],then form into small balls.
- Roll in cocoa/icing suger/choc strands
- Put in cases and allow to set.
- Try not to eat immediately.
I don't use flavouring.....instead I replace half the chocolate with Lindt Intense Orange [for wonderful crunchy orange flavour] or Lindt Peppermint chocolate......absolutely delicious....... and they make great little gifts as well.

i've just been making my chocolate ganache using jamie oliver's recipe which is just double cream, chocolate and abit of butter, the fudge is cooling, it worked this time, and nigella's hokey pokey is cooling. lots of sweets for giving and taste testing of course. will check back for the microwave fudge and maybe make another batch.
