Recipe of the week-broccoli,sweetcorn and bacon macaroni

No. 1 on my 'school's out for summer' to do list is to try a new recipe each week......this is what we tried in Week 1.....and everybody agreed it was one they liked.


Broccoli,sweetcorn and bacon macaroni
125 gms macaroni
200 gms broccoli florets [I didn't actually weigh]
6 rashers bacon chopped into pieces [or a pack of bacon pieces]
1 tbsp flour
150 gms light soft cheese [I used Philadelphia Light with chives]
200 mls milk
small can sweetcorn
25 gm  grated cheddar [ I didn't actually weigh]
20 gm breadcrumbs  [I didn't actually weigh]

Cook the macaroni......add broccoli for last 3 minutes
Fry bacon pieces
Stir flour into pan with bacon, then add soft cheese and milk and stir til melted together
Add macaroni,sweetcorn and broccoli and stir
Tip into large ovenproof dish
Sprinkle grated cheese and breadcrumbs on top
Grill for 5 minutes 

Serve alone or with salad....eat and enjoy....it's delicious!

Looks yummy. I don't usually measure or weigh ingredients either.

Sounds really delicious, I am totally going to make this since I know the whole family would enjoy it; well, the boy will pull out the broccoli, but you can't win em all! Thanks for sharing the recipe! Sue x
